Long used by chefs, these days this ingredient has become a must have for any kitchen. This soft, pale yellow fat is not only delicious but is reputedly good for us. Goose fat contains a relatively low proportion of saturated fats and a higher proportion of the healthier mono- or poly unsaturated fats and essential fatty acids. Goose fat makes the best roast potatoes. Try adding fresh rosemary to give added delicious flavour.
