TASTING NOTES Giving wild thyme on the nose this dark, full-bodied wine has lots of red ripe fruit, sweet liquorice and roasted coffee flavours and peppery, savoury characters from the Syrah DESCRIPTION The domaine is in the south of the appellation cooled by the sea breezes of the Camargue and on an ancient raised river bed with galets roulés soil. The vines are 25 years old and yields around 50 hl/ha. Grapes are destemmed and fermented traditionally for 15 days to ensure a good balance of fruit and tannins. Château l'Ermitage was founded in the XIth Century by the hermits of Sainte Cécile d'Estagel Abbay. It is situated on the pilgrimage route of Santiago de Compostella. The estate's total surface covers 80 hectares of sunny south facing vineyards, which benefit from the airy Mediterranean climate. We have a close relationship with owner Jérôme Castillon and he has been instrumental in some of our own wines; Savoir-Faire Mourvèdre is produced from his fruit, but produced by our winemakers in his cellar. Jérôme restricts the use of oak influence as much as possible and new oak is not used. Côte de Boeuf, lamb cutlets with rose winemary, saussison sec, mature hard cheeses. Storage Instructions

Wine should be stored away from sunlight and fluorescent lights. The capscrew bottles can be placed vertically, while the cork bottles should be placed horizontally. Ideal storage temperature from 14-16 degrees, avoid storing wine in hot places above 24 degrees and avoid vibrations.
