Details

Soft vanillin and tannins on entry, almost floral like aromas and slightly sweet earth, pastille, lolly Shiraz flavours. The French oak is very much in the background, however adds enough flavour to give a great complexity and length. A medium bodied Shiraz with lovely bright youthful colour on release at 18 months. Part vinomatic and part open top 2-4 tonne fermenters. The latter plunged two times per day. After 5 days, pressed off, with malolactic fermentation conducted in tank. The wine then went into 100% French oak made up of 25% puncheons and overall 25% new oak. The Shiraz grapes are sourced solely from the Graveyard Vineyard, being clonal vines planted through the 90s and massale selection from the 1968 plantings, with the oldest at 10 years of age. INFORMATION DETAILS Variety: 100% Shiraz ABV: 14% Food Pairing Veal, duck and cheese. Drink Very enjoyable over the medium term, and will reward long term cellaring.

Storage Instructions

Wine should be stored away from sunlight and fluorescent lights. The capscrew bottles can be placed vertically, while the cork bottles should be placed horizontally. Ideal storage temperature from 14-16 degrees, avoid storing wine in hot places above 24 degrees and avoid vibrations.
