Lacinato Kale, also known as dinosaur kale, has the characteristic of oblong, dark green leaves, slightly wrinkled but not curly like Kale. The leaf stalks are long and have quite strange silver veins. The reason it is called "dinosaur kale" is because the leaves of this type of kale are quite similar to the skin of a dinosaur. The leaves of Kale Lacinato have tougher and thinner leaves than other varieties, the taste is not as strong, and is mildly sweet like young cabbage. High nutritional content, goes well with salad. Kale Lacinato is often used as an ingredient in pesto sauce and Italian vegetable soup.
