TASTING NOTES EVIDENCE reflects the respect we have for the biodiversity in our vineyards, as “evidenced” by the return of game birds to our land, which has inspired this label. The feathers represent the wine’s finesse and balance, while also alluding to its wild and natural nature. This Riesling has a yellow color, with an expressive and racy nose filled with citrus and white flower aromas (acacia, lemon flower). It has a lively attack, a lot of ripe citrus fruits, mineral, great structure and a clean, dry finish. A Riesling of great finesse, pure and of beautiful elegance. DESCRIPTION The Estate-grown organic grapes come from various hillside vineyards around the village of Bergheim, with a predominance of heavy clay/limestone soil. The vines are cultivated according to the rules of Organic Viticulture. Grapes are hand-picked, usually around mid-October, with the whole grapes pressed. The pressed juice is separated from the free-run juice and undergoes 12-to-24 hours of “debourbage” or settling, to eliminate impurities, which are then filtered out. Fermentation takes place, using a combination of natural and selected yeasts, in stainless steel vats. It matures in 150-year old wooden vats in which the wines are breathing and profit from a micro oxidation ... aging on fine lees for about 8 months. The wine goes through two rackings, the first to separate the lees from the wine and the second to clarify the wine. It has the potential to age for another five-to-seven years.
