Ogliarola is the most widespread Apulian cultivar with a wide alternation between vintages. It has a high yield on average over 25% but in the area between Fasano and the wonderful Ostuni yields have reached 36%. From important studies the current cultivar corresponds to the "Sallentina" which in Roman times was praised by Cato. The oil has a golden yellow color with greenish reflections of low fluidity. It has a medium fruity taste of olive accompanied by other fruits. Pungent persistence, it is also slightly bitter with a pleasant hint of almond. With a sweet fruity flavor and full and medium aromatic maturation, it has excellent resistance to rancidity.
