1. Origin of the Name “Marshmallow”

The name of this candy traces back to an ancient ingredient used in the original recipe: the sap extracted from the roots of the marshmallow plant (Althea officinalis). Historically, this syrup-like sap was used as a medicinal remedy.

Over the centuries, marshmallow sap proved most effective as a treatment for coughs and sore throats. (Modern medical studies have verified that marshmallow root indeed soothes inflammation in mucous membranes.) In the 19th century, European doctors prescribed boiling the sap with sugar to create a palatable cough syrup. In France, the sap was whipped with sugar and egg whites to form lozenges. By the end of the century, French confectioners had replaced the medicinal sap with the more accessible gelatin.

2. Ingredients for Making Marshmallows

Ingredients:

  • 3 packets (21 g) unflavored gelatin
  • 1 cup water, divided
  • 1 1/2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/8 teaspoon salt
  • 1 tablespoon vanilla extract
  • Powdered sugar, for dusting

Notes:

  • If powdered gelatin is unavailable, you can substitute with gelatin sheets.
  • To select fresh and clean eggs, feel the shell with your hand—if it feels slightly rough and textured, it’s fresh. Alternatively, shake the egg gently; if there is no internal movement, it’s a new egg.

4. Tips for Storing Marshmallows

Marshmallows have a long shelf life. Store them in an airtight container with a little powdered sugar. They can last up to 3 weeks at room temperature.
Like many other candies, marshmallows’ enemies are humidity and moisture. Prolonged exposure to heat can also cause them to melt or spoil.

At home, this product can be stored for 1.5–2 months, provided that the container is tightly sealed. The room temperature should not exceed 20°C, and the humidity level should be around 65%.

If you want to extend the shelf life of marshmallows, dry them occasionally in the oven and then store them, layering them with clean parchment paper.
