Made from the legs of medium-heavy pigs, having bone-in weight of about 11 kg. The meat is very soft and tasty thanks to dual cooking (steaming then grilling). The seasoning with fresh herbs and spices such as bay-leaf, juniper, white pepper and rosemary gives Brace a unique flavour, just like a home-made roast.
