Details

Michel Chapoutier established Tournon in 2007 shortly after purchasing 50 hectares of property in the heart of the Victorian Pyrenees and Heathcote. He recognized that the cool weather patterns and remarkable diversity of soil and exposures in this region would allow him to make distinctive wines from the Syrah/Shiraz grape of his homeland utilizing his biodynamic winegrowing philosophy. Named after the Hermitage commune, Tournon leads the movement in Australia towards elegant, balanced wines. Grape variety Shiraz Soil Soil is composed of podzolic layers coming from clay and ferruginous schists. Harvest The grapes are harvested at maturity avoiding over maturation. Vinification The grapes are destemmed and then they ferment in cement or stainless steel tanks. Maceration lasts from 2 to 3 weeks in order to allow the tannins extraction that provides a good ageing potential to the wine. Maturing The wine is entirely aged in cement or stainless steel tanks and it is bottled 12 months later. Tasting Colour: brilliant, dark ruby colour. Nose: deep with black fruits and pepper aromas. Palate: supple and greedy with silky and elegant tannins
