The original recipe would come from the Swiss Valais where it would have been invented by herders. Most often made from cow's milk, raclette is originally a mountain specialty, made with cheeses that are softer than Gruyères. Originally, cheeses were melted in front of the hearth and then scraped with a knife over potatoes. Restaurant owners have developed individual ramps, then a specialist in household appliances invented an electric appliance with individual pans which has definitely popularized these cheeses.
