Details

Michel Chapoutier established Tournon in 2007 shortly after purchasing 50 hectares of property in the heart of the Victorian Pyrenees and Heathcote. He recognized that the cool weather patterns and remarkable diversity of soil and exposures in this region would allow him to make distinctive wines from the Syrah/Shiraz grape of his homeland utilizing his biodynamic winegrowing philosophy. Named after the Hermitage commune, Tournon leads the movement in Australia towards elegant, balanced wines. Grape variety Chardonnay Soil Shallow fersialitic soils derived from quaternary alluviums of clays, on shales and siltstones (primary age) with inclusions of quartz. Harvest Grapes are hand-harvested in general by the 10 last days of February. Vinification Whole bunch pressing, followed by a cold sedimentation for 48 hours. Indigenous alcoholic fermentation in barrel (20% new oak). Maturing The wine is aged for 6 months in French oak barrels with light bâtonnage. Tasting Colour: vibrant golden yellow. Nose: fresh crisp nose with notes of exotic fruits and slight toasty notes Palate: supple & fresh attack, round structure supported by a good balance between acidity and minerality

Storage Instructions

Wine should be stored away from sunlight and fluorescent lights. The capscrew bottles can be placed vertically, while the cork bottles should be placed horizontally. Ideal storage temperature from 14-16 degrees, avoid storing wine in hot places above 24 degrees and avoid vibrations.
