From the end of February and during the three months that the harvest lasts, it is full of excitement at La Plantation. Only the clusters of ripe pepper, with grains of a beautiful dark green color, are picked. The pepper clusters are laid out and dried in the sun for 2 to 3 days, depending on the amount of sunlight. This natural drying phase reinforces the unique taste and aroma of Kampot Pepper. The grains are then processed and selected by hand for their density and size which must, according to IGP rules, be greater than 4 millimeters. Only large peppercorns, with a beautiful dark black color, are sold under the name Kampot Pepper. Kampot Black Pepper develops strong and delicate aromas. Its very intense and sweet taste at the same time reveals resinous notes, eucalyptus and fresh mint.
