The old Mimolette is easily identifiable by its round shape. Its rind is grayish, filled with holes and cracks. Its paste is dark orange, dry and brittle. Its flavor is fruity, slightly spicy and ends with a hint of bitterness. A cheese of character with salty and sweet aromas accompanied by a fruity and cellar scent.
