Gouda Old

The old Gouda cheese, in Dutch 'overjarige kaas', matures for over a year. Because the cheese has been in a warehouse for so long, much of the liquids in the cheese have evaporated. After a year it becomes very hard. It is even a little dry. During this time, the salt inside the cheese has crystallized, so this very old cheese is rich and very salty.
